Biting into warm chewy delicious cookies. One of my favorite ways to celebrate holidays. I made these heavenly chocolate almond fudge cookies for Christmas and they were a huge hit with our family. I mean like none left and hubby was asking when I was going to make more kind of hit, so I decided to dress them up a bit and bring them back for Valentine’s Day. There’s not much that says Valentine’s Day like chocolate, right?


Valentines Fudge Cookies

You can enjoy these Valentine’s Day cookies even more knowing that I swapped some of the ingredients for healthier alternatives including the butter for Smart Balance.

These cookies are so moist and rich they almost have a brownie texture to them! And they are just as moist the next day. I picked up the fruit chews made with real fruit juice at Hobby Lobby. They did not melt in the oven and the cherry was just the right flavor pairing for the chocolate. So. Good.

Serves: 5 dozen
  • 2 sticks Smart Balance softened
  • ¾ cup packed brown sugar
  • ⅔ cup sugar
  • ½ cup natural baking cocoa
  • 3 teaspoons pure almond extract
  • 1 teaspoon natural vanilla extract
  • 2 eggs
  • 2¼ cups all purpose flour
  • 1 teaspoon baking soda
  • Valentine's Fruit Chews
  1. Preheat oven to 375.
  2. In a large mixing bowl cream the Smart Balance sticks, cocoa, sugars and extracts.
  3. Blend one egg in at a time adding to the Smart Balance and sugar mixture.
  4. Gradually add the baking soda and flour to the dough blending thoroughly.
  5. Using a cookie scoop or a teaspoon, drop 2 inch cookies onto an ungreased cookie sheets.
  6. Cook for 4 minutes, then remove from oven and add one Valentine's candy to each cookie.
  7. Cook for an additional 4 minutes.
