Being a mom is a 24/7 hour job and there are no sick days. I’ve already had two terrible sicknesses this year and I have gained a greater appreciation for the sacrifice of my own mother as I have tried to keep my kids happy, family fed, and my house from being a complete pigsty. The worst thing about being sick is not having an appetite so naturally one of the last things I want to do is cook. That’s where the slow cooker comes in handy.
This amazing pork tenderloin takes less than 10 minutes of your time in the kitchen and the slow cooker does the rest. I love cooking with tenderloin because it’s flavorful, tender, and lean. What makes this pork sing though is that dark gorgeous sweet sauce. Don’t you want to just lick that spoon?!? You’ll want to drown your meat in this sweet balsamic sauce. It’s absolutely fantastic! Wondering what to serve with it? Pair it with a side salad or steamed veggies, and some potatoes. I LOVE these Garlic Roasted Red Potatoes and Twice Baked Potatoes but you could also serve a simple baked potato.
- 1 (2 pound) boneless pork tenderloin
- 1 teaspoon ground sage
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (or 1 minced garlic clove)
- ½ cup water
- ½ cup light brown sugar
- ½ cup water
- ¼ cup balsamic vinegar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Mix sage, salt, pepper, and garlic together in a small bowl and rub over the tenderloin. Place in the bottom of the slow cooker along with ½ cup water. Cook on low for 6 hours. Remove from slow cooker and shred.
- Just before the pork is done, place the sauce ingredients in a small pan. Cook over medium heat for 4 minutes or until the sauce thickens, stirring occasionally. Remove from heat and drizzle over shredded pork. Serve.
