Thank you Lunchbox for partnering with me on this recipe and conversation.
Back to school season is in full swing and for us that meant the milestone of starting kindergarten, but for my dear friend that meant her daughter would be moving away from home for the first time and heading off to college. My friend understandably has emotions all over the place from wanting to lock her in her room so she can’t leave to excitement about the new chapter and watching her girl spread her wings at college. Since she’s 18 and we can’t lock her up, we are choosing to focus on excitement instead. They have had a great time picking out things to make sure her dorm room reflects her personality in her signature color purple and I had fun putting together a care package of things I know she loves including homemade Chocolate Cheese Cake Krispie Bars and a supplies for a coffee bar that I picked up at Keurig at Walmart.
My friend’s daughter loves hanging out with her friends at the coffee shop, but my friend mentioned she wanted her daughter to learn to live on a budget while she was at college. I thought a great way to save at least a few fivers would be to help her create an awesome coffee and tea bar in her own room.
I started with the Keurig K200 which is very college student or care package budget friendly. It’s easy to use and you can make coffee or tea with the push of a button. Even cooler you can visit Kuerig at Walmart and pick colors to coordinate with the dorm room! (While you are there be sure and snag your free K-cup pod sample pack and the coupon!) I then picked some coffee and teas to get her started on her awesome coffee bar- Cafe Bustelo, Folgers Gourmet Vanilla Biscotti, and every Southern girl needs her sweet tea so I got Lipton Refresh sweet tea. I also included a hot and cold cup in her signature purple, a cute cup (Loved the Oh Snap! It’s so her!) and filled it with flavored creamers in a colorful goodie bag. To finish it off I included sprinkles, syrup and a purple food storage box with the homemade treats. I think she’s well on her way to staying within her college coffee budget and her dorm room being the place to hang out to chat over coffee.
I chose these Chocolate Cheesecake Krispie Bars because they are no bake, so simple, and something that she could make in her dorm room on the allowed hot plate. I added a twist on the traditional marshmallow krispie treats by using Cheesecake Chocolate Hazelnut Spread. It’s something my daughter’s friend loves and I could eat the stuff with a spoon. You can find it at the grocery store with the regular hazelnut spread.
- 3 tablespoons of butter.
- 4 cups of mini jet puffed marshmallows
- 6 cups of puffed rice cereal
- ½ cup Chocolate Cheesecake Hazelnut spread.
- In a large sauce pan, melt the butter.
- Once the butter is melted, stir in the marshmallows.
- Continue stirring until the marshmallows are completely melted.
- Remove from heat and add the Chocolate Cheesecake Hazelnut Spread.
- Stir until the spread is melted.
- Add the cereal and stir until all of the cereal is coated with the marshmallow mixture.
- Spread mixture evenly over a 13x9x2 baking pan.
- Let cool, cut into bars, and serve.
Between her cute new room, her great coffee bar from Keurig at Walmart and an easy to make delicious treat, my friend’s daughter is sure to be a hit in her dorm- and it also gives her some comforts of home to help her adjust. I know she’s excited about college life but I’m sure she has some mixed emotions too. 🙂 And you don’t have to be headed to college to enjoy Keurig or these treats. I’m sure my friend and I will be talking over tea and dessert over how much we miss our kiddos while they are at school.
