This is the season for finding recipes, planning holiday menus, and cooking up a storm. I am already making my cornbread dressing and bourbon ham in my oven so I need my slow cooker to lend a helping hand. I also need some simple sides to round out my holiday menu like these slow cooker honey glazed carrots.
- 1 16 oz bag baby carrots
- 4 tablespoons butter
- ½ cup light brown sugar
- 1 teaspoon honey
- ¼ teaspoon pumpkin spice (optional)
- parsley to garnish
- Add carrots to 2.5 quart slow cooker.
- Cut butter into small pieces.
- Add butter and remaining ingredients except parsley to carrots in slow cooker.
- Stir gently to combine.
- Cook on low 4-6 hours or until carrots reach desired tenderness.
- Stir occasionally.
- Add parsley when serving.
I added the pumpkin spice to give the carrots a bit of holiday flavor (along the lines of sweet potatoes) but they are awesome just as honey glazed carrots too. The recipe can also be doubled to accommodate a large holiday meal as well. Just remember to use a larger slow cooker.
I love the holidays and filling my table with wonderful food and surrounding it with people I love. It is definitely the most wonderful time of the year!
