We are headed out in our travel trailer this weekend and so I have been menu planning for the trip. This trip is to Galveston for some holiday fun. For the first time we will be camping on the beach. Yes, in December! It may sound crazy but we are going to visit Moody Gardens Festival of Lights. Instead of driving back two hours late at night or renting an expensive hotel, we are making it a camping trip! We had no problem getting a beach front spot. 🙂
Normally when we camp we like to keep our meals simple. On Friday nights when we arrive we always have Frito pie. It’s a family favorite but it also couldn’t be any easier which is good because we are busy setting up the inside and outside of the trailer. The rest of the weekend we will take advantage of the trailer’s grill with burgers or steaks, or foil packet meals. I will also cook hot dogs or breakfast taco on our Blackstone Griddle
Occasionally, I will use the trailer’s small kitchen and make something in the slow cooker or on the stove. I have to be careful what I make on the stove though because the smoke alarm is a sensitive soul and can be heard for miles. This weekend the highs are in the 50’s so I don’t see myself standing on a windy beach grilling. What do you want when it’s cold outside? Soup. I’m opting for a hopefully smoke alarm free recipe- an easy taco soup. I tested it at home and bowls were cleaned so I will take that as an all clear for camping dinner.
Easy Taco Soup
There’s lots of versions of taco soup out there because you can’t beat it for how delicious it is and how simple it is to make. This is my version. Like any good Texan I have a stock of Tex Mex pantry staples and so raided them to come up with this easy taco soup.
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 cup diced onions
- 1 package taco seasoning
- 1 package spicy ranch dip mix
- 1 can Mexicorn drained
- 1 can black beans drained
- 2 cans enchilada sauce
- 1 small can diced green chilies
- 1 can of Rotel mild
- 1 can of Rotel chili fixin's
- Add olive oil to a soup pot
- Add ground meat
- Then add onions, taco seasoning, and ranch dip mix.
- Stir all the ingredients together to blend.
- Cook ground meat until browned and drain.
- Return drained ground meat to pot.
- Add remaining ingredients and stir to blend.
- Simmer on stove for one hour stirring occasionally.
- Serve with cheese, green onions, tortilla strips or desired condiments.
I like this easy soup for camping because the ingredients are easy to transport. The canned goods can go in the small travel trailer pantry. There’s only a few cold items which is good because the travel trailer fridge evokes episodes of Tiny House Hunters. I can make it on the stove or even in the slow cooker. For the slow cooker I would just brown the meat first and dump all the ingredients in and let the slow cooker do it’s thing for a few hours. I could also even make it ahead and bring the soup in tupperware to heat up. Bonus we used the leftovers over tortilla chips for nachos. Stay tuned to see if winter beach camping was as big a hit as the easy taco soup.
