Easy old fashioned skillet cornbread recipe.

Serves: 8
  • 2 cups self-rising cornmeal (Must be self-rising.)
  • ½ cup vegetable oil
  • 2 eggs
  • 1½ cups butter milk
  • ½ cup heavy whipping cream
  • 1 teaspoon sugar
  • 1 small can diced chiles drained
  1. Preaheat oven to 350.
  2. Pour oil in a cast iron skillet.
  3. Place the skillet in the oven to heat for 10 minutes.
  4. In a mixing bowl combine other ingredients together and mix thoroughly to form batter.
  5. At the end of the 10 minutes remove the skillet from the oven.
  6. Increase oven temperature to 400.
  7. Pour just a little of the hot oil in the batter and stir.
  8. Pour the remaining batter in the skillet.
  9. Bake for 15 to 20 minutes until golden and the edges are crispy.
  10. When you take the skillet out of the oven if you will set the skillet on a damp kitchen towel it will help the cornbread come out clean and not stick.
  11. The chiles are optional but I made the cornbread with them so I served it with butter and jalapeno jelly.
