Crispy & Tender Rosemary Red Potatoes

Crispy on the outside and tender on the inside these potatoes are seasoned simply but are incredibly delicious.

  • 1 pound Red Potatoes
  • ¼ cup extra virgin olive oil
  • 1 spring fresh rosemary
  • salt and pepper to taste
  1. Preheat oven to 400.
  2. Cut the red potatoes into ¼ths or 8ths depending on the side of potatoes.

  4. Place the potatoes in a small roasting pan or dish.

  6. Sprinkle liberally with salt and pepper. Toss to make sure they are evenly coated. The seasoning will make the dish a star.
  7. Pour the olive oil over the potatoes and toss to coat evenly.

  9. Remove the leaves from one sprig of rosemary and sprinkle over potatoes.

  11. Roast in oven for 1 hour or until golden brown on the outside and fork tender.
