Steak & Potato Frittata Recipe

Simple and delicious frittata recipe for the meat and potatoes lover with leftover steak and breakfast potato hash.

Serves: 6 servings
  • 6 eggs beaten
  • 2 ounces shredded cheddar cheese
  • salt and pepper to taste
  • 1 tablespoon butter
  • 1 cup cooked diced breakfast potatoes
  • 1 cup leftover steak chopped into bite size pieces
  • ½ cup chopped Rotel tomatoes drained
  1. Preheat oven to broil.
  2. In a medium sized bowl whisk together eggs, cheddar, and salt and pepper.
  3. In a cast iron skillet , melt tablespoon of butter.
  4. When the butter is fully melted, add steak, potatoes, and Rotel.
  5. Stir for a couple of minutes and then pour eggs over the mixture.
  6. Stir to combine the eggs and meat and vegetables.
  7. Cook for 4-5 minutes or until most of the top of the dish is not runny.
  8. Place skillet into the broiler for 4-5 minutes or until the top is golden brown.
