Serves: 4 servings
  • 2 large chicken breasts
  • 1 cup chopped onions
  • 1 cup salsa
  • 1 package HEB taco seasoning
  • 1 can 4 oz diced fire roasted chilis
  • 1 can 10 oz Rotel
  • 1 teaspoon chipotle powder
  • 3 cloves garlic chopped
  • 4 cups brown rice prepared
  • 1 can Mexicorn, tortilla strips, crema fresca, fresh cilantro, and reduced fat cheese for optional garnish
  1. Add all ingredients up to the brown rice into a slow cooker.
  2. Stir to combine.
  3. Cook on high for 4 hours or low for 8 hours.
  4. When slow cooker is done shred chicken with two forks and stir to combine with sauce.
  5. Serve chicken (approx 2 oz) and sauce over 1 cup of brown rice.
  6. Add optional garnishes as desired.
