Oatmeal Fudge Chewies

Serves: 24
For the Cookie:
  • 1 cup butter, softened
  • 2 cups light brown sugar
  • 2 eggs, room temperature
  • 2 cups flour
  • 2½ cups quick oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
For the Fudge:
  • 2 cups semi-sweet chocolate chips
  • 1 can sweetened condensed milk
  • 2 teaspoons vanilla
  • ¼ teaspoon salt
For the Cookie:
  1. Preheat oven to 325 degrees F and grease a 9x13 inch baking pan.
  2. In a mixing bowl, mix the flour, baking soda, and salt; set aside.
  3. Cream butter and sugar for 3 minutes in the bowl of an electric mixer until creamy. Add vanilla and eggs and beat until smooth. Mix in the flour mixture and then the oats until combined.
  4. Measure ¾ cup dough and set aside. Spread the remaining in the bottom of the pan.
For the Fudge:
  1. Heat the chocolate chips in the microwave for 1 minute. Mix in the evaporated, salt, and vanilla and then microwave in 30 second increments until melted and smooth.
  2. Spread fudge over the dough and then dot the ¾ cup dough over the top.
  3. Bake for 34-36 minutes until top is golden.
  4. Cool completely before cutting.
