An easy taco soup that is thick and hearty with ground beef, tomatoes, chilies, corn, black beans, and a flavorful Tex Mex seasoning.

Serves: 8 servings
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 cup diced onions
  • 1 package taco seasoning
  • 1 package spicy ranch dip mix
  • 1 can Mexicorn drained
  • 1 can black beans drained
  • 2 cans enchilada sauce
  • 1 small can diced green chilies
  • 1 can of Rotel mild
  • 1 can of Rotel chili fixin's
  1. Add olive oil to a soup pot
  2. Add ground meat
  3. Then add onions, taco seasoning, and ranch dip mix.
  4. Stir all the ingredients together to blend.
  5. Cook ground meat until browned and drain.
  6. Return drained ground meat to pot.
  7. Add remaining ingredients and stir to blend.
  8. Simmer on stove for one hour stirring occasionally.
  9. Serve with cheese, green onions, tortilla strips or desired condiments.
