I am always on the hunt to find great snacks that don’t just come from a pre-packaged box, but also aren’t super complicated. These energy bites are a fabulous snack for my kids and I love them after a workout! They are easy to make and the ingredients can really make or break the healthy factor, since there are only a few of them.
No Bake Energy Bites
2 cups Old-Fashioned Oats
1 cup Peanut Butter
1 cup Flaxseed or Wheat Germ
3/4 cup Mini Chocolate Chips
1/2 cup Honey
Mix all ingredients together well and chill for 30 minutes. Form into balls. If they are too hard to shape, add a bit more honey.
To get the most out of these, use natural peanut butter made from only peanut butter. Our Kroger has a great and affordable natural brand or you can grind your own in many stores. Local honey is fabulous for helping with allergies, so see if your store or farmer’s market has honey from an area near YOU. This recipe can also be adapted with things like dried fruit or nuts.
