Hi! I am a country girl who married her soul mate all the way from Ireland in 2005 (Thank you Match!). We are now raising two beautiful children welcomed in 2010 and 2011 just outside of Houston, Texas in our dream home that we built in 2015. I am a former accountant with a degree in International Business Management which I began at Lamar University and finished at University of Phoenix. We made the decision for me to leave the corporate world when Ethan was born in 2010. Over the years since, I’ve went from spreadsheets to Scout Mom and Special Needs Mom and I love the beautiful turn this life has taken. I started Penney Lane in 2011 to share my passions for travel and cooking along with ideas to make life a little easier and more fun.
Meet the Other Folks At Penney Lane:
Ian (here at our vow renewal in Cancun), affectionately known as the Irishman is originally from Northern Ireland went to university in Edinburgh, Scotland and has been working in the US as an engineer since 2001. Calm and steady and the perfect balance to my more free spirited personality I couldn’t have picked a better person to do life with and be a dad to my kids. The golf course and the beach are his happy places.
Ethan born in 2010, the one who made me a mommy is my second grader who loves video games, being a Scout (and doesn’t seem to mind old Mom as his leader) and science. He has the biggest heart and the most infectious smile and laugh. Ethan has ADHD and Sensory Processing Disorder but that doesn’t stop him from being an incredible kid who is a joy to be around. He is in the gifted program at school and I know he’s going to do great things.
And last but certainly not least, Caitlin my sweet little redhead born in 2011 and soon to be kindergartener (How did that happen??). You wouldn’t know it now but Caitlin used to be quite shy but in the last year or so this little butterfly has come out of her cocoon. She is my little adventurer and outdoors girl. You can find her swinging or jumping on the trampoline. She is a clever girl just starting to read and a lover of all things Disney as shown by us recreating Ariel in the Little Mermaid Rooms on one of our frequent trips to Walt Disney World.
Why We Travel
I discovered my own love of travel in the back of a Jeep Wagoneer as a kid riding across Texas to visit Big Bend National Park with my grandparents. We began introducing our children to travel when my son was 3 years old. There is definitely a learning curve as a special needs family travels (I’m here to help!) but we’ve been across the US, to Disney (If you’re a fellow Disney lover I invite you to join my Disney Travel Group), to Jamaica, Ireland and more the last 4 years. I believe kids learn best by experiencing. I want to fill them up with memories of beautiful and interesting places, cultures, experiences with people different from themselves and trying new things as much as I can in the 940 weekends and 18 summers I have with them before I let them fly. We’ve recently added Tin Gypsy to our family. She’s a travel trailer and we can’t wait to see even more places as we travel with her. Penney Lane has become a source of travel inspiration for many including fellow special needs families who email or message as they begin to plan their own adventures.
Let’s Get Cooking
Along with travel, my other passion is cooking. I completed a culinary certification (in action at cooking school below) that was a culmination of a love that started when I was helping my mama cook while standing on a chair as a kid not tall enough to reach the stove. My recipes are delicious but simple. Often featuring my love of all things Tex Mex and comfort food like these chile lime tacos or something that can be made while camping or traveling, my goal with sharing recipes is to show busy homecooks like me that delicious doesn’t have to be hard.
We also feature easy ideas for the home as we continue to make our one story in the country ours, navigate brother and sister space and find that balance of kid friendly but still beautiful. You will also find fun ideas to keep the kids busy and ways to make life easier (Hello- birthday parties!).
