So I joined Weight Watchers. Again. For about the 5th time. If you’ve been with the blog since this time last year, you might remember that I actually did pretty well for a while in 2015. Then we sold our house and lived in a hotel for over two months and the train went off the tracks. And flipped a few times. I shared on my newsletter this week that I’m off to a good start this year (but as I mentioned I’ve been down this road before so I’m just taking it one day at a time) but one thing I’m doing differently is cooking lighter. I love a good burrito bowl. I crave a good burrito bowl, but no exaggeration one typical fast food burrito bowl takes a days worth of points! Let that sink in a moment. So when I was craving one this week, I applied what I’ve been learning and created this still delicious but Lighter Chicken Burrito Bowl.
Looks pretty delicious, right? And it was! I’ve found that a key to lighter recipes that don’t feel lighter is keeping the flavor there, but doing it with spices and lighter sauces like salsa or veggies instead of heavy creams and cheeses. The HEB taco seasoning is one of the best I’ve used (like in this Tex Mex Cheeseball) and gives the chicken a bold flavor and when paired with the Rotel (I think Rotel is a pantry staple right alongside flour and sugar.) and the roasted chilis, it’s so good you’re not even thinking about that it’s got only a fraction of the cheese and cream.
- 2 large chicken breasts
- 1 cup chopped onions
- 1 cup salsa
- 1 package HEB taco seasoning
- 1 can 4 oz diced fire roasted chilis
- 1 can 10 oz Rotel
- 1 teaspoon chipotle powder
- 3 cloves garlic chopped
- 4 cups brown rice prepared
- 1 can Mexicorn, tortilla strips, crema fresca, fresh cilantro, and reduced fat cheese for optional garnish
- Add all ingredients up to the brown rice into a slow cooker.
- Stir to combine.
- Cook on high for 4 hours or low for 8 hours.
- When slow cooker is done shred chicken with two forks and stir to combine with sauce.
- Serve chicken (approx 2 oz) and sauce over 1 cup of brown rice.
- Add optional garnishes as desired.
Using Weight Watcher’s recipe builder I calculated one serving at about 9 points which is very tidy for dinner especially one as comforting as this one. (Please double check the points for yourself. I am only on Weight Watchers as a user and not a trained Weight Watchers employee.) Most of the points do come from the brown rice which actually is what makes it feel like a burrito bowl to me, but if you want to save points you can use the chicken filling with a low carb tortilla instead. You can also save a few points by skipping the creme and cheese. I only used a sprinkling because I need my cheese but it still counts. 🙂
Aside from being an incredibly mouthwatering light recipe, it’s also made in the slow cooker. So much winning right?! I dump it all in around lunch time and by dinner the chicken is fork tender and everyone is drooling from the yummy aroma coming from the slow cooker. It makes a ton using only two chicken breasts so it’s a great one for planned left overs. I’m going with the low carb taco option for lunch tomorrow!
As I mentioned, I’m just taking this Weight Watchers journey day by day which is why there’s not some big write up on the blog right now. I don’t know what will happen, but I do know this, I’m in a good place for success now that the kids are a little older and that I’m finding that cooking light doesn’t have to mean depriving myself with recipes like this burrito bowl.
