When I’m meal planning, we often do MANWICH Monday. It’s quick, easy and delicious. Perfect for nights with baseball practice or a simple weekend meal. And if you see the Recipe Index on this blog you can see we also do a lot of Mexican food and Taco Tuesday. I actually have half a shelf in my walk in pantry that I keep stocked with the varieties of RO*TEL which we consider its own food group in our house. We also keep MANWICH on hand as a pantry staple.
As I was looking at the ingredients on the shelves trying to come up with my menu for this week inspiration hit- why not combine the RO*TEL and MANWICH for……wait for it…..Mexican MANWICH!
From Walmart’s product section I picked up fresh limes for a Chipotle Lime Mayo for a cool element for the spicy Mexican MANWICH, avocado for some color and texture, and sharp Manchega cheese to give it some tang and bite. I grabbed some soft ciabatta buns from the bread department. I was totally inspired now!
With the simplicity of the cans of RO*TEL and MANWICH and a few fresh ingredients we had a quick but hearty and delicious dinner that is going to go into our regular dinner rotation and one of our go to’s for Mexican Night.
While the Mexican MANWICH was simmering I sliced the avocado and then moved on to grate the Manchega. To keep the avocado from turning brown while the Mexican MANWICH was finishing cooking I wrapped the slices in a paper towel dampened with lemon juice.
- 1 pound ground meat
- 1 can MANWICH
- 1 can RO*TEL Chili Fixins
- 1 package favorite taco seasoning
- Brown ground meat in a skillet and drain.
- Pour in Manwich sauce, Rotel Chili Fixins drained, and taco seasoning.
- Stir to combine.
- Let simmer 10-12 minutes.
- Optional: serve with avocado slices and grated Manchega on a soft ciabatta bun.
The other thing I whipped up while the MANWICH was cooking was a simple Chipotle Lime Mayo. Take one cup of mayo and thoroughly combine with 1.5 teaspoons of Chipotle powder and juice from one lime. It gives the spicy Mexican food a cool contrast.
We are big Mexican food lovers in our house and this Mexican MANWICH is so easy to make and has a delicious bold flavor. I will have to make sure I keep my RO*TEL and MANWICH stash stocked up because I can see us making this one often!
